Carrot and coriander Soup!

This is easy to make and only takes a few minutes to reheat.


5 x Carrots

1 onion

1/2 tea spoon ground coriander

Pinch of Salt and pepper

Fish corriander

750 ml Veg stock

butter or margarine



Roughly chop the carrots and onion, soften them in a pan with butter. Add the ground coriander and add the stock and salt and pepper.

Bring to the boil and then let simmer for until the carrots have softened.

When the veg has softened, either hand blend the mix or put in to a blender and blend until smooth.

Chop the fresh coriander when you are ready to serve.
